Moni Crocker

I have decided to start a new "routine" in our humble little home. I am going to try to make a crock pot meal every weekend. So far I love the end result of the meals we've made. D made a killer roast and I made a rotisserie chicken. I would use the crock pot more but I am leery about leaving it on all day while I am away at work, which is why we have decided to aim for the weekends or "days-off" of work.  It worked out well last weekend. I tossed in a whole chicken into the crock around 10am. While it cooked, I did several loads of laundry and cleaned up the apartment. I even baked some cornbread and made my side dishes, which were baked brussel sprouts and red rice. The chicken turned out great, falling off the bone and super moist. The challenge will be making crock pot meals that are healthy and not loaded with sodium, which is totally unnecessary. I have seen many recipes that include adding a whole can of cream of mushroom soup. Again, much too salty. I will be skipping recipes like this or at least adjusting them.

We shall see how this weekend goes. I am just happy to have another 3 day weekend. I am busting out the crock pot for the 4th of July for some healthy baked beans to accompany the beef and turkey sliders I plan to make. Happy 4th of July!

I would be extremely grateful if you would share your recipes! We have a crock pot and I am constantly searching for easy, healthy weekend meals that can be stretched into the week (for boring, working people :).
